Honey Orange Fish Fillets

3 tablespoons orange juice
1 tablespoons olive oil
2 tablespoons honey
1/2 teaspoon dried dill weed
1/8 teaspoon white pepper
1/2 teaspoon salt
1/2 teaspoon orange zest
1lb haddock or halibut fillets


1. Combine all the ingredients except the fillets and pour over fish in a glass baking dish. Cover and chill for at least one hour.

2. Remove fish and reserve marinade. Grill the fillets, turning once and brushing with marinade, for about 12-15 minutes. Ensure fish is thoroughly cooked and flake easily when tested with fork.

Serves 4.
